Summer Salad With Chicken
Ingredients
Romainne and Red Leaf Salad Greens(enough for 4 large salads)
rinsed, spun, and broken into pieces
1 Medium Valdila Onion(sliced)
1 cup shredded carrot
1 cup shredded mild cheddar cheese(yellow for color)
2 Large Jersey Tomatoes, cut into cube size pieces
1/2 cup chopped cashews
1/2 cup raisins
2 cups cooked chicken breast, cut into cube size pieces
Directions
Divide all ingredients equally
Start with greens in bowl
Then onion, carrot, cheese tomatoes cashews, raisins, and chicken.
Dressing
Mix 1 part apricot preserves to 2 parts Hellman’s Real Mayonnaise(blend Well)
Place a dollop on each salad.
Serve with fresh Blueberry Muffins and Homemade Iced Tea.
